Ketoloaf – Microwave and Airfryer (Gluten free)

Ingredients

  • 125g of Qetomix
  • 1.5tsp baking powder
  • salt for seasoning
  • 100ml of egg white 
  • 80ml carbonated/sparkling water (or tap water with 1/2 table spoon of white wine or apple cider vinegar to support the rising process)

Method

Place 125g of Qetomix into a mixing bowl.

Add the baking powder and salt for seasoning.

Use a handheld electric mixer, add in the egg whites and water. Mix until the mixture stiffens into a ‘dough’

Place the dough into a 600ml pyrex dish available from IKEA, place lid on the top, but don’t fasten it. 

Cook with a mid high setting in the microwave for 6 mins,

Remove from the dish and place on a rack for a 2-3 mins to release the steam. 

Finally place in an Airfryer and cook at 190 degrees C for 7 mins.
