Ingredients (for a 9 x 9 inch baking tray)
- 60g of qetomix
- 2 tbsp of coconut flour
- 0.5 tsp baking powder
- 150g of sweetener (monkfruit/truvia)
- 21g of cocoa powder
- 100g of 90% chocolate
- 110g of unsalted butter
- 3 large eggs
- 1tsp of vanilla extract
Use a 9 x 9 inch baking tray with parchment paper or grease with butter.
Method
Heat oven to 170 degrees C (fan assisted)
Use a microwave safe bowl, put in the softened butter and chocolate and microwave in approx 30s rounds and stir until it is well mixed.
In a second bowl, combine all the dry ingredients
Using a handheld mixer, beat the eggs for 30 secs, then pour in the melted butter and chocolate. Continue mixing.
Add in the dry ingedients until well incorporated, trying not to over mix the batter, to get the pudginess.
Once in the tray, bake for about 18 to 20 mins, or until a crispy thin layer forms and the brownie is moist in the middle.
