Raspberry Kream Tarts

Ingredients for pastry cases (makes approx 24)

  • 125g Qetomix
  • 50g butter
  • 20-25ml eg white

Ingredients for filling

  • Mascarpone cheese
  • Keto friendly jam (e.g. raspberry or strawberry flavour)

Mix to your taste. e.g. start on a 1:1 ratio basis, and finish by placing a raspberry on the top, if you wish.

Method

Chop up the butter and work into the mix.

Adding the egg white will helps the mix to bind to create the pastry

Roll out the pastry on either:

  • a light dusting of mix on a flat surface
  • a sheet of grease proof paper
  • a sheet of reusable baking paper

Use a 2-3 inch diameter pastry cutter to cut the pastry cases. 

We use a mini muffin tray to shape the mini pastry cases. 

Place in the oven to 10 mins at 170 degrees C and then turn down to about 100 degrees C for a further 45 – 60 mins.

Mix mascarpone cheese and ketofriendly jam to your taste – start on a 1:1 ratio basis and the place into the pastry cases. 

Finish by placing a raspberry or strawberry into the middle and a light dusting of keto sweetener like. e.g. trivia (caster).
