Ingredients
For the pastry
- 200g Qetomix
- 2 eggs or 1 avocado (approx 80g)
Filling
- 1tbs oil
- 340g spinach
- 2 eggs
- 1 small tin of anchovies/6 fillets
- Salt and pepper
Spinach and Anchovy Qeto Flan
To make the pastry, use approx 200g of mix and stir in two beaten eggs (or approx 80g of avocado for a vegan equivalent).
Roll out and place into a 9” flan dish (some pastry will hang over the edge of the dish, so just trim that off)
Bake for about 15mins at 180 or until lightly brown.
While the pastry case is cooking heat 1-2 tbs oil in a pan and add the spinach.
Cook until it is wilted, mix lightly with eggs and anchovies, being careful not to make it too mushy and add to pastry case
Bake for 15-20 mins. (Sundried tomatoes and feta can be added as desired)
Can be eaten warm or cold.
