Ingredients (for a 9 x 9 inch pan)
- 60g Qetomix
- 2 tbsp coconut flour
- 150g Monkfruit/Truvia (sweetener)
- 0.5 tsp baking powder
- 100g of unsalted butter
- 1 tsp of vanilla flavoured (barista) Bulk syrup
- 3 eggs
- Zest of one lemon
- Handful of blueberries to place on the the top,
Method
Heat oven to 170 degrees C (fan assisted)
Mix all the ingredients together and put into silicone cupcake cases or greased 12 cupcake tray.
Bake for 25-30 mins.
