Blueberry Blondies – gluten free

Ingredients (for a 9 x 9 inch pan)

  • 60g Qetomix
  • 2 tbsp coconut flour
  • 150g Monkfruit/Truvia (sweetener)
  • 0.5 tsp baking powder
  • 100g of unsalted butter
  • 1 tsp of vanilla flavoured (barista) Bulk syrup
  • 3 eggs
  • Zest of one lemon
  • Handful of blueberries to place on the  the top,

Method

Heat oven to 170 degrees C (fan assisted)

Mix all the ingredients together and put into silicone cupcake cases or greased 12 cupcake tray.

Bake for 25-30 mins.
